Top Chick Po' Boy
Red Sauce:
Prepare a red mayo sauce by combining 2 cups buffalo or hot sauce sauce and 1 cup mayonnaise in bowl; mix thoroughly. Set aside.
Sandwich:
Prepare your choice of Top Chick breaded chicken according to manufacturer’s directions and cut into bite size pieces
French hoagie buns
Creamy coleslaw or shredded lettuce --- whatever suits you
Tomato - sliced thin
To assemble, slice one bun lengthwise. Scoop out some of the inside. Spread red sauce on both halves of bread. Spread bottom half of bun with chicken bites. Add lettuce or slaw, tomato and top half of bread. Top with additional sauce if desired. Cut in half crosswise.
Remember to have plenty of napkins handy or a bath towel to catch drippings from sandwich.
Oriental Chicken Salad
Oriental Dressing:
3 tablespoons honey
1 1/2 tbsp. rice wine vinegar
1/4 cup mayonnaise
1 teaspoon dijon style mustard
1/8 teaspoon sesame oil
Blend together all ingredients for dressing in a small bowl with an electric mixer. Chill dressing in refrigerator while you prepare the salad. Serve salad dressing on the side.
Salad Ingredients:
1 package Top Chick Tenderloins prepared according to instructions
3 cups chopped romaine lettuce
1 cup red cabbage
1 cup Napa cabbage
1/2 carrot, julienned or shredded
1 green onion, chopped
1 thinly sliced red onion
1 tablespoon sliced almonds
2 tablespoons mandarin orange wedges
1/3 cup chow mein noodles
Assemble salad by tossing the chopped romaine with the chopped red cabbage, Napa cabbage, and carrots. Sprinkle sliced green, red onion and oranges on top of the lettuce. Add the almonds over the salad, followed by the chow mein noodles. Cut the chicken into small bite-size chunks. Place the chicken onto the salad forming a pile in the middle. |
